Barbeque Grilled Corn, Maple Bacon, Fresh Avocado, Tomatoes and Feta make an amazing summer salad that can be prepared quickly and makes a fresh accompaniment to any meal!
Cut the kernals off of 4 cobs of barbequed corn of your favorite prepared corn on the cob and place into a bowl. You can also use 2 cans of corn rinsed and drained.
Dice shallots, half the tomatoes and cut up the maple bacon and add to the bowl along with the paprika.
Cube 2 avocados and toss directly with lime juice and gently toss with the corn mixture to combine. Add salt and pepper to taste and serve immediately!
