Easy Tomato Bruschetta with Balsamic Glaze

Ingredients

Balsamic Glaze

  • 1/2 cup balsamic vinegar

Bruschetta

  • 2 Tomatoes, Large
  • 2 tbsp Red onion, finely diced
  • 2 cloves garlic
  • 1 tbsp minced fresh basil
  • 1/2 tsp kosher salt or to taste
  • 1/4 tsp ground pepper
  • 1 tsp olive oil

Instructions

Balsamic Glaze

  1. In a sauce pan place 1/2 cup balsamic vinegar over medium heat, bring to a simmer and continue simmering for 5-6 minutes until it is reduced by half.

    Remove from heat and pour into a small bowl. Sauce will continue to thicken as it cools.

Bruschetta

  1. Dice tomatoes finely and place on paper towels to get rid of some of the juices.

  2. Finely chop the red onion, garlic and basil and mix together with tomatoes in a bowl. Add salt, pepper and olive oil and stir to combine.

  3. Top each baguette crisp with a tbsp of bruschetta and a drizzle of the balsamic glaze. Enjoy!
