Banana Bread

Sweet incredibly moist Banana Bread with a bit of crunch!

Ingredients

  • 2 cups all-purpose flour sifted
  • 1 tsp cinnamon
  • 3 bananas mashed
  • 3/4 cup sugar
  • 3/4 cup brown sugar lightly packed
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla
  • 1/3 cup buttermilk
  • 1 tsp baking soda
  • 1/2 cup walnuts, chopped finely *optional

Instructions

  1. Preheat oven to 325 degrees Fahrenheit.  Lightly butter a 9x5 loaf pan and coat with flour.  

  2. Sift flour and whisk in the cinnamon, set aside

  3. Mash the bananas using a fork.  Whisk in both sugars, oil, egg and vanilla.

  4. Add 1 tsp of baking soda directly into the buttermilk, give it a stir and then pour into the banana mixture.  It should bubble and foam and this is great as it will make the loaf rise!  Stir the buttermilk in just until combined.  

  5. The walnuts are optional, if you choose to add then fold 1/4 cup into the banana mixture.  Pour the mixture into the loaf pan then sprinkle the remaining 1/4 cup on top of the loaf and place in the oven on the middle rack.  Bake for 75 minutes before checking if toothpick comes out clean.  Check every 5 minutes if some batter is stuck to the toothpick.
