I have always been (and always will be) a Crust fan! I like all pastry and the best part of a pie for me is the crust! Ever heard of Crazy for Crust Blog? Well It is right up my alley! When dreaming up these scones I never anticipated that the bottom “Crust” would indeed be just like a buttery flaky pie crust! They were fluffy and moist in the inside. The tartness of the strawberries were perfect contrast to the sweet white chocolate chips. I couldn’t keep my hands off of these!

Tips for the best Strawberry White Chocolate Scones:

All the ingredients need to be as cold as possible. Make sure the butter stays into the fridge until you are incorporating it and if you are gathering ingredients or chopping up strawberries still place it back in the fridge to stay as cool as possible.

DO NOT SKIP THE CHILL STEP! The dough needs to be very cold when placed in the oven or these will not come out flaky. When the cold butter warms up in the oven the steam that comes out helps create the moisture and rise that we need in the dough!

There are many different flavours that would work in these scones. Don’t have strawberries? Add Blueberries, or cherries, or raspberries. If you prefer milk chocolate chips, or semi sweet, use those instead! Even just some lemon or lime zest. I will definitely be experimenting more with these Strawberry White Chocolate Scones in the future!

I tried out this recipe shaping the dough into a circle and cutting into 8 triangles. The scones were HUGE! Which is awesome… but you could definitely cut smaller scones so I found shaping the scones into a long rectangle and then cutting zigzag lines down the length of it created smaller triangle portions!

The flaky dough bakes up to have a pie crust like consistency on the bottom. The center is a moist biscuit like texture dotted throughout with fresh tart strawberries and sweet white chocolate chips. While the top has a wonderful light brown crispiness to it…*drool.

Ingredients

  • 3 cups all purpose flour
  • 1/2 cup granulated sugar
  • 6 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup Unsalted Butter *cold
  • 1 cup buttermilk *see tips
  • 2 tsp vanilla
  • 2 tbsp lemon juice *juice from 1/2 lemon
  • 1-1/2 cups strawberries *diced
  • 1 cup white chocolate chips
  • 1 egg for eggwash

Instructions

  1. *If making your buttermilk see notes!*  Mix your buttermilk first so it has time to sit!*

  2. Add Flour, sugar, baking powder, baking soda and salt and whisk together.  Cut COLD butter into cubes and cut into the flour using a pastry cutter or two knives.

  3. Lightly toss strawberries into flour mixture to coat the strawberries.

  4. Pour vanilla and lemon juice into buttermilk and mix.  Measure 1 cup of the buttermilk mixture and add to flour mixture.  Using a fork toss the mixture just until flour is mostly incorporated.  *Only add the remaining buttermilk mixture if dough is too dry and flour won’t incorporate.

  5. Add Chocolate Chips and mix into the dough.

  6. Lightly flour clean counter top and dump out the dough.  Fold the dough over itself a few times with hands until all flour/ chocolate chips are incorporated into the dough.   Place dough ball on a piece of parchment or saran wrap and shape into a long rectangle approximately 1″ thick.

  7. Make sure dough it tightly wrapped and place in the freezer for 30 minutes.

  8. Preheat oven to 375 degrees Fahrenheit. 

  9. Cut dough into triangles and place 2″ apart on a parchment lined baking sheet.   Whisk 1 egg and brush the tops and sides of scones before placing in the oven.  Bake 25 minutes before Checking that the tops are golden brown and baked through!

Recipe Notes

*To make buttermilk pour 1 cup of milk (either 2% or Homogenized Milk) and add 1 Tbsp of Vinegar OR Lemon Juice and let sit for 10 minutes.  The milk may then look slightly curdled which is perfect.
