I love this spinach and egg breakfast wrap it tastes so much like Starbucks breakfast wrap! It’s so delicious, healthy, and FILLING! Which is exactly what I want for breakfast!
I am not much of a breakfast person, I hate eating right when I get up. I need to wait an hour or more before I even want to eat anything which is not always an option!
This wrap is such a great breakfast. I really like the flavours that spinach and peppers add to the eggs.
Delicious substitutes:
- I used regular eggs but egg whites are a great healthy substitute as well.
- Feta is a great salty kick but goat cheese makes this so creamy!
- I used frozen spinach but fresh works too! Just add a tbsp water to the pan and cover and saute for a few minutes to soften it!
- Add cooked black beans or lentils for a great protein boost!
- Sundried tomatoes or fresh red tomato diced would work great in this as well!
- Fresh Avocado would also work well in this for a energy boost!
- Use any sauce you’d like! Franks Red Hot, Sweet Chili sauce, some hummus, there are many alternatives to make this a great morning pick me up!

- Take out frozen spinach and either thaw a bit in the microwave for 30 seconds or place in a covered frying pan with a tsp of water until thawed.
- Next I added the eggs and scrambled until the eggs were almost cooked through.
- Then I added the roasted red peppers and feta just until they were heated up and when eggs are cooked through I placed them in the center of a whole wheat wrap.
- Add any sauces you desire or a bit of salt and pepper and enjoy for a quick, healthy and wholesome morning breakfast!

- 2 large eggs
- 1/3 cup Spinach *sauteed
- 1 Tbsp Feta *crumbled
- 2 Tbsp Roasted Red Peppers
- 1 Tsp Sweet Chili Sauce *Optional
- 1 Whole Wheat Wrap
Instructions

Take out frozen spinach and either thaw a bit in the microwave for 30 seconds or place in a covered frying pan with a tsp of water until thawed and warm. Just make sure to drain any leftover liquid before adding the eggs.
