If you ever had reservations about cabbage, these Roasted Cabbage Wedges will definitely change your mind! Lightly seasoned and topped with salty prosciutto and sweet shallots, then roasted until browned crispy edges and tender in the middle.
It’s like baking the cabbage transforms it, of course it is still cabbage, but the tender middle and super crispy edges are soooo good!
The flavour of the roasted cabbage wedges is even better after adding some thinly sliced sweet shallots and some salty prosciutto.
I have to admit we are more of a fruit household than vegetables! I typically struggle to have a good vegetable side dish to go along with a meal. Pasta and bread is never an issue! But cooked vegetables…I need work.
Ever since trying out cabbage this way I have cabbage in my fridge pretty steady waiting for its turn! It lasts for ages in the fridge too so it’s great to have on hand!
The kids have been off school this week. Even though we are relaxing and not doing much of anything, they are super busy and always on the go. My house is unruly to say the least and meal prep gets away from me.
Last minute planning for a meal is tough, so side dishes are usually what is overlooked! Even though this recipe takes a bit of time to roast it takes almost no time to prepare. I like being able to pop it in the oven first and have a bit of time to prepare the rest of the meal!
Roasted Cabbage Wedges
The wedges are as simple as cutting the cabbage and brushing with olive oil. Sprinkle with seasonings, shallots and if you want to take these over the top I recommend the prosciutto on top!
I don’t bother flipping them but I LOVE the little crispy edges, like a lot! If you prefer a more even browning, flip them halfway through!

Roasted Cabbage Wedges
Cabbage Wedges lightly seasoned with thyme, and topped with sweet shallots and salty prosciutto then Oven Roasted until tender on the inside and crispy on the edges.
Ingredients
- 1/2 head green cabbage
- 3 tbsp olive oil
- 1/2 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 shallot, sliced thinly
- 3 slices prosciutto
Instructions

Preheat the oven to 400 fahrenheit

Peel the outer leaves of the cabbage off then slice down the centre through the core. Then slice the half into quarters and then each quarter into 3 thin wedges. I ended up with 6 wedges from the half of a cabbage.

Brush the olive oil on both sides of the wedges and place on a parchment lined baking sheet.

Sprinkle the wedges evenly with salt, pepper and dried thyme. Then sprinkle the shallot over the wedges.

Top each wedge with 1/2 a slice of prosciutto or a piece large enough to mostly cover. (if you prefer you can leave the prosciutto off they are still amazing!)

Place in the oven to roast for 30-35 minutes. The edges will get very dark and crispy and are so full of flavour. Pierce the thickest part of one of the wedges with a fork to check, if its tender or easy to pierce it is done!
