I’m just going to go ahead and say there is not enough energy in the world for a mom, but these bites are a start! These Protein packed energy balls have loads of peanut butter with sweet natural honey, fibre rich flaxseed and chewy old fashioned oats. Only 6 ingredients in this easy no bake snack makes them a super fast alternative to less healthy sweets! It tricks your mind into thinking they are cookie dough!
Has anyone else’s week been a “1 step forward, 2 steps back” kinda week? If I thought it was cold last week I was jumping the gun, I think maybe the kids are stir crazy a bit (that’s where the 2 steps back always comes in”). They are literally tearing my house apart faster than I can pick up/clean it.
I never seem to have the energy to keep up and it seems like they are hungry every 30 minutes. I find myself snacking while I’m getting them food which is NOT helping my so called diet. When I need something fast, easy and filling, that’s where these Protein Packed Energy Balls come in!
Protein Packed Ingredients
- Flax seeds: They are a great source of protein and fibre, I love adding anything that will keep me fuller for longer so protein is a must.
- Old Fashioned Oats: Also known as rolled oats are rich in protein and fibre as well. They are slightly steamed and flattened before packaging and are quite chewy so take longer to eat. (At least I’m going to go with that theory…whatever keeps me away from the pantry for more than 5 minutes is going into these balls!)
- Honey: although low in vitamins and minerals is much better for you than refined sugars and works well as a binding agent in these balls!
- Shredded Coconut: Adds fibre and iron, but it is also high in saturated fats so “all in moderation” comes into play! It adds a wonderful flavour and is a chewy and delicious treat in these balls! The amount is very minimal for your daily intake unless you eat the whole batch in one day in which case, I’m not even mad…that’s impressive!
- Peanut Butter is high in protein and healthy fats. It has many vitamins and minerals in it, and is quite rich in antioxidants making it a healthy addition to these balls.
Breakfast or Snack Balls
Having these on hand has been wonderful. The kids love them and it has been so easy for me to grab for breakfast or when I need a mid afternoon pick me up. I hate eating breakfast but these are so delicious! I don’t find it as bothersome to grab two to tide me through until lunch as making a cumbersome meal.
How to Make Energy Balls
One bowl, no fuss, throw in all the ingredients and stir it up with a spoon. I usually use my medium cookie scoop but it went missing(I think my 1yo may have thrown it into the recycle bin with everything else I own and it went out…I know…traumatizing).
This time I used the smallest scoop, I don’t even roll them with my hands as we always keep them in the freezer. I just scoop them onto the cookie sheet, freeze them then dump the frozen balls all into a freezer container. They will store in the freezer fine for up to a month.
If you prefer to refrigerate them I recommend chilling them on the cookie sheet for 15 minutes as it makes them easier to roll. Then roll them with your hands so they are a bit more packed, store them in a sealed container in the fridge for up to a week!

Peanut Butter Protein Bites

Only 6 ingredients in these easy No bake snacks makes them a super fast alternative to less healthy sweets and tricks your mind into thinking they are cookie dough!
Ingredients
- 1 1/2 cups Old Fashioned Oats
- 1/2 cup Flax seed, ground
- 1 cup Peanut Butter
- 1/2 cup Shredded, Sweetened Coconut
- 1/4 cup Liquid Honey
- 1/2 cup Semi-Sweet Chocolate Chips
Instructions

Add all ingredients to bowl and stir with a spoon until well mixed. Cover and chill for 15 minutes to make it easier to roll.

Scoop into approximately 1″ balls, roll with hands to smooth. Place in the refrigerator, covered, until ready to be eaten! Or: Roll into balls and place on a baking sheet, freeze for 15 minutes to harden then place all the balls into a freezer safe container sealed for up to a month! (freezing them slightly before placing into a container ensures they won’t all freeze together!)
