Christmas is fast approaching and I don’t feel ready at all! I finally got my oven fixed though so I can start baking up a storm! Christmas decorating in a new house takes longer when not everything has its “spot”! But I have a ton of craft projects in the works and cant wait to get started on them!
I love baking when it is easy enough for my kids to help. They come into the kitchen with me and even though it DRASTICALLY slows down production they get really excited to help and that is what it is all about!
How to make Old Fashioned Chewy Gingerbread Cookies
Cream together shortening and brown sugar for 5 minutes to get it fluffy and pale in colour. Add 1 egg and the molasses and mix until combined.
I used my amazing gingerbread spice mix for this recipe. You can mix up a batch ahead of time and make lots of different recipes using this mix! Find the recipe here.
Whisk together your dry ingredients and pour into the brown sugar mixture. Mix until combined, cover and chill for 2 hours or overnight.
After chilling just use a cookie scoop to get all the cookies the same size and roll the dough in your hands to get the balls round. Roll them in granulated sugar and place on a baking sheet approximately 2″ apart. Bake until cookies show lots of cracks on the top and a slightly browning bottom my oven was for 11-13 minutes.
I hope you enjoy these cookies as much as we do! The kids were grabbing them warm out of the oven! The smell of fresh baked gingerbread also cannot be beat!

Ingredients
- 1 cup light brown sugar *lightly packed
- 3/4 cup shortening *tenderflake
- 1 Large Egg
- 1/4 cup molasses
- 2 cups all purpose flour
- 2 tsp baking soda
- 1 tbsp gingerbread spice *see notes for recipe link
- 1/4 tsp granulated sugar *for rolling
Instructions

Add shortening and brown sugar to a mixing bowl and mix on medium high for 5 minutes until mixture is pale and fluffy.

Add 1 Egg and mix then add molasses to the mixture and mix until incorporated.

Whisk together flour, baking soda and gingerbread spice then add dry ingredients to the brown sugar mixture and mix until no flour remains.

Cover and place in the fridge for 2 hours.

Preheat oven to 350 Fahrenheit. Using a cookie scoop roll approximately 1" gingerbread balls then roll them in granulated sugar to coat. Place on a lined cookie sheet approximately 2" apart and bake between 11-13 minutes. Cookies will start to brown on the bottom and show lots of crackling on top. Do not over bake or they will lose their chewiness and gain more "snap!"

Leave them rest on the cookie sheet for 2 minutes before moving them to a cooling rack to cool completely.
