I already know these creamy crunchy peanut butter balls will be a Christmas staple in our house! I’m glad I didn’t make them too far ahead as even using the great frozen outdoors as my dainty freezer my hubby can sniff out peanut butter from a mile away and go out and find them!
I cannot believe we are only 5 short days until Christmas!! Someone once told me having kids speeds up time and I totally believe it!
I have presents to wrap and the whole house could use a dusting (always!) and several recipes I wish I would have completed…but…the holidays have arrived and what will be, will be!
At the start of the season I asked my husband what his favourite Christmas dainty was and he proceeded to tell me a few peanut butter ones…always peanut butter for him! If it doesn’t have peanut butter it is just hit or miss! So this recipe I knew would be a hit with him!
I used extra creamy peanut butter as it’s a staple in our pantry! I knew I wanted lots of crunch so I added graham crumbs and Rice Krispies as well as a bit of icing sugar. I chilled these before dipping in semi sweet chocolate, and white chocolate and voila…so easy!
I hope you enjoy these as much as we do!
No-Bake Peanut Butter Crunch Balls
Crunchy Creamy Peanut Butter balls wrapped in rich sweet chocolate
Ingredients
- 1 cup peanut butter, extra creamy
- 1/2 cup unsalted butter, room temperature
- 1 cup confectioners sugar
- 1 cup graham crumbs
- 1 1/2 cups rice krispies
Coating
- 300 grams semi-sweet chocolate *can use semi-sweet, milk chocolate or white chocolate
Instructions
-
Beat peanut butter and butter for 1 minute until creamy.
-
Add powdered sugar and mix until completely incorporated. Add both graham crumbs and rice krispies and hand mix with a spoon until mixed in.
-
Scoop approximately 2 tbsp and hand roll into balls and place on a parchment lined baking sheet. It will be very sticky which is ok as long as it stays in a ball. Continue to roll all the balls and place in the freezer for 20 minutes until firm.
-
Place chocolate of choice in a microwave safe dish and heat 30 seconds at a time stirring between each until melted. Quickly roll each ball between your hands to smooth before dropping each ball into the chocolate to coat and place back on the parchment paper to firm up. The smoother the ball is before you coat it with chocolate the smoother the finished ball will look! If decorating using sanding sugars or dragees immediately sprinkle while the chocolate is still wet. If drizzling with another color chocolate or candy melts you can wait until the chocolate ball is hardened!
I KNOW these have to be awesome!!
