I’ve officially found my new favourite healthy lunch! Lime Avocado Egg Salad has zesty lime, sweet shallots, protein packed eggs and creamy avocado on whole grain bread! Wow it is so good!
I love making a recipe that is extremely quick to pull together but also has a lot of flavour. This recipe is very healthy taking a regular egg salad and replacing the mayo with avocado and lime juice. The lime adds acid and I also included toasted sesame seeds for a bit of crunch.
Lime Avocado Egg Salad Ingredients
- Avocados are loaded with healthy fats, fiber and lots of important nutrients including vitamin K and C.
- Sesame Seeds are a great source of added fiber and are high in protein.
- Eggs are high in protein and vitamin D.
- Lime juice aids in digestion and water consumption and packs a whole lot of flavour!
I want to explain why I choose certain ingredients for recipes. I love making the classic recipes that everyone knows and loves but if I am able to substitute certain ingredients with healthier alternatives and not compromise flavour or even add to the flavour that is what I am going to do!
Having kids also means adding nutrients or rather HIDING nutrients where I can! I added sesame seeds for a kick of nutrients and some crunch but flavour wise you would barely know that it is there!
Avocado and Egg are soft so I add some crunch with sesame seeds! Avocado and Egg are also quite bland together so I add lime juice for acid and zest! The flavour that lime gives to this recipe is amazing and I can’t imagine leaving it out, it gives it such a fresh taste!
This recipe is Keto and Whole 30 friendly and very low carb. If your looking for something that can be enjoyed for breakfast, lunch or supper this is the meal for you!

You can make this recipe ahead of time but avocados oxidize quickly so when storing be sure to place plastic wrap directly against the surface of the avocado salad. Anywhere you leave an air bubble will turn brown quickly. I stored this in the fridge covered for 2 days and it was still amazing but the lime flavour really mellowed out. I would add juice from another 1/2 lime to kick it back up a notch!

Lime Avocado Egg Salad

Ingredients
- 1 Avocado mashed
- 2 Hard boiled Eggs diced
- 1 tsp shallots minced
- 1/2 lime juiced
- 1 tsp toasted sesame seeds
- 1/8 tsp kosher salt
- 1/8 tsp fresh cracked pepper
Instructions

dice eggs and set aside

Add all other ingredients to a bowl and mash with a fork until avocado is just slightly chunky.

Add eggs and avocado mixture together and toss gently to combine.

Serve immediately on your favorite bread, in a wrap or wrapped in lettuce leaves.
