Have you all had enough of grilled corn yet??!!! I definitely HAVEN’T!!! But I promise to move on…right after this Grilled Corn Summer Salad!!!

This corn salad definitely is a great balance of flavours!  A bit of char on the corn off the grill, sweet maple bacon with salty feta.  Acid from the tomatoes and creamy avocado with lime juice as the only dressing.  I could polish off bowls of this!  It hits all the feels!

With summer comes spending lots of time outside. We tend to push the limit because the kids aren’t fighting. Then finally coming back inside and the HANGRY kids come out! Queue the scrambling to get something ready for supper!

None of these ingredients are difficult to find and there is a pretty good chance you have them already in your house.

Grilled Corn Summer Salad Ingredients

There are lots of fresh ingredients in this Grilled Corn Summer Salad.  First off the corn on the cob.  I used a sweet corn and grilled it directly on the barbeque because I LOVE the flavour that it gets and those tiny bits of char are to die for!  My recipe for grilling corn is here:

Next the maple bacon!  Yes I am aware that you can just buy maple flavoured bacon at the grocery store and cook it up!  I tried out something new though! lol.

I had regular bacon on hand and brushed on pure maple syrup before barbecuing it and then brushed a bit more on after it was cooked!  It. was. delicious!  That being said, barbecuing bacon isn’t for the faint of heart and i’m not sure I would even recommend it because WOW THE FLAREUPS! (but the taste was amazing!)  ***Please be safe!***  Keep a water bottle near buy for the flames!  Or just bake it in the oven for safety purposes!

All the other ingredients are straight forward!  Fresh avocado, yum.  Salty feta, yes please.  Smoky Paprika, yup.  Cherry tomatoes, more please.  Please serve it immediately as avocados even tossed in lime will start to brown and it just isn’t as glorious!  I hope you enjoy this one as much as I do!

Grilled Corn Summer Salad

Barbeque Grilled Corn, Maple Bacon, Fresh Avocado, Tomatoes and Feta make an amazing summer salad that can be prepared quickly and makes a fresh accompaniment to any meal!

Ingredients

  • 4 cobs of corn, grilled and then kernels cut off
  • 7 strips maple bacon, cooked and diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup shallots diced
  • 1/4 tsp smoked paprika
  • 2 avocados cubed
  • 2 tbsp lime juice
  • salt and pepper *to taste

Instructions

  1. Cut the kernals off of 4 cobs of barbequed corn of your favorite prepared corn on the cob and place into a bowl. You can also use 2 cans of corn rinsed and drained.

  2. Dice shallots, half the tomatoes and cut up the maple bacon and add to the bowl along with the paprika.

  3. Cube 2 avocados and toss directly with lime juice and gently toss with the corn mixture to combine. Add salt and pepper to taste and serve immediately!
