Fall is HERE! The colours are so beautiful I LOVE just driving around! It also brings a bit of that instant “finish up before the snow flies” panic!

Cool is setting in and with it comes digging up the gardens! I love seeing what the year produced and I’m really liking baking everything! Baking really adds flavor beyond steaming or boiling vegetables!
These easy roasted brown sugar carrots are delicious baked! The sugar caramelizes and the garlic helps to balance the sweetness. I love my vegetables a bit crunchy when they are finished cooking, not soggy, so if you like your veggies well done your going to want to add about 5 minutes to this bake time!
I wanted to make this recipe super simple and use easy ingredients that are most likely already in your house.
Making Easy Roasted Brown Sugar Carrots:
Melt the butter and coat the carrots with it. Mix together the brown sugar, garlic powder and parsley flakes and sprinkle over the carrots. Toss to combine and bake in the oven! Couldn’t be easier but the taste is great!
Add 5 minutes to the bake time if you like your carrots softer. I like a slight crunch left in these baby carrots!

Easy Roasted Brown Sugar Carrots
This Easy Roasted Brown Sugar Carrots Recipe is a simple side dish for Thanksgiving, Christmas or any holiday meal! The sugar caramelizes and with the slight crunch of the carrot they are absolutely delicious!
Ingredients
- 12 carrots medium sized
- 2 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp parsley flakes dried
- 2 tbsp salted butter melted
Instructions

Preheat oven to 375 degrees Fahrenheit

Scrub carrots clean and trim stems to 1" or less. Peeling is not necessary but can be if preferred. Place in a bowl.

Melt butter and pour over carrots. Toss to coat.

In a small bowl, mix brown sugar, garlic powder and parsley flakes and pour over buttered carrots. Toss to combine.

Line a baking sheet with parchment paper and spread out the carrots on top so they are not touching.

Bake for 35 minutes until carrots are fork tender. *see notes for additional baking. Serve hot and enjoy!
Recipe Notes
*Add 5 minutes to bake time if you like your carrots softer when finished! These baby carrots have a bit of fresh crunch left when complete!
Glazed Carrots are usually made on the stove but they are so much more amazing roasted !!! Tossed with brown sugar and butter then roasted so you get gorgeous caramelised edges with a caramel-like sauce, this a super quick and easy carrot side dish that s so outrageously delicious, you could just have a bowl of this for dinner. (I did!)
