There is something so refreshing about Fall! It’s not just the cooler weather but it’s so calm! I love slowing down for a few moments after the busy pace of summer and just taking some deep breaths! Listening to the leaves rustling and falling it is just gorgeous!
Fall to me is cozy sweaters, SCARVES! (I have way too many!), pumpkin spice EVERYTHING, and fresh apples!
I made up a delicious apple dessert to kick off fall on the right foot! Using some additional warm spices than you would normally see in an apple pie really took this over the top!
How to make an Easy Apple Galette
- First is important to make the galette dough (Pate Brisee) It is really important to keep the butter very cold and to use ice water. (not just cold water!) The dough needs to rest in the fridge for an hour before using for a very tender flaky dough!
- **The way you slice your apples will make a difference!** If you dice them in little 1/2″ cubes you need to saute them in a pan for 10 minutes or until slightly tender before piling into the crust or they will be crunchy after baking! If you thinly slice them and place directly into the dough they will only be slightly crunchy after baking! **If you like your apple pieces very soft you need to saute in a pan with all the sugar and spices before piling onto the uncooked dough**
- Squeeze lemon juice directly onto fresh cut apples to keep them from browning.
- After rolling out the dough place it back in the fridge to keep it as cold as possible until your ready to fill with apples!
- Spread 1 tbsp of flour on the rolled out dough to contain all those juices and to keep the crust crispy!
- Layer the apples onto the floured dough (quickly!) you want the crust to stay cold sprinkle with walnut pieces (if desired), fold up the edges and top with 2 tbsp of cold butter, brush the dough with eggwash.

Ingredients
Galette Dough
- 1-1/2 cups all purpose flour *plus more for rolling
- 1/2 cup unsalted butter, cubed and chilled
- 1 tbsp granulated sugar
- 1/4 cup water, iced, plus 3 tbsp if necessary
Apple Filling
- 3 Granny Smith Apples, peeled and cored approx 5 cups sliced
- 1 tbsp lemon juice
- 1/4 cup brown sugar, lightly packed
- 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1 pinch cloves
- 2 tbsp unsalted butter, cold
- 1/4 cup walnuts, diced *optional
Instructions
Galette Dough

Place flour in a mixing bowl and whisk in sugar. Using a pastry cutter or 2 knives cut in cubes of cold butter until only pea sized or smaller pieces remain.

Add 1/4 cup of iced water and using a spatula gently toss into the flour mixture to combine. The mixture will start to clump a bit, add 1 Tbsp at a time more water until only a small amount of loose flour remains.

Turn it out on a clean counter and using your hands press the loose flour and form into a disk. Wrap in saran wrap tightly and refrigerate for at least 1 hour.
Apple Filling

Preheat oven to 375 degrees Fahrenheit

Roll out dough on a lightly floured surface until approx 14" diameter or until over the edges of a baking sheet. Place on parchment back in the fridge until apple mixture is ready.

Peel, core and thinly slice apples and place in a bowl. Squeeze lemon juice over apples and toss to coat.

Sprinkle cinnamon, nutmeg, cloves and brown sugar over apples and toss to combine.

Spread 1 tbsp flour on top of the galette dough and spread evenly to help keep in the juices. Top with apple mixture and lightly pack together leaving 2" of dough around the edges uncovered.

Sprinkle the walnuts over the apples if desired and fold up the edges of the dough lightly pressing together. Place 2 pads of cold butter on top of the apples. Brush the dough with egg wash and place into the oven. Bake 34-38 minutes until the crust is golden brown.

Let the galette rest for 10 minutes until the juices settle before cutting. Serve warm or cooled with ice cream for a treat!
