Ingredients
Cranberry Orange Loaf
- 1/3 cup olive oil
- 2/3 cup orange juice
- 2/3 cup granulated sugar
- 1 tbsp orange zest *zest of 1 orange
- 2 large eggs
- 2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1-1/2 cups fresh cranberries
Glaze
- 1/2 cup icing (confectioners) sugar
- 1 tbsp orange juice
- 1/2 tsp orange zest
Instructions

Preheat oven to 350 degrees Fahrenheit

coat 1lb loaf pan with a thin layer of butter and line the bottom and up the sides with parchment leaving enough to use as handles.

Place olive oil, orange juice, zest, sugar and eggs in a mixing bowl and mix on medium speed for 2 minutes until well incorporated, set aside.

Mix dry ingredients together, flour, baking powder, baking soda and salt, set aside.

Rinse cranberries and drain off water. Take 1 tbsp of the flour mixture and stir into the cranberries to coat them with flour, set aside.

Add half of dry ingredients into orange mixture and mix until almost incorporated. Add second half of flour mixture and mix gently until only some flour remains.

Add cranberries into the mixture and hand mix them into the mixture. Take care not to over mix.

Pour mixture into lined bread pan and smooth it out before placing in the oven for 50-55 minutes or until a toothpick inserted in the centre comes out clean.

Whisk together icing sugar orange juice and orange zest. After the bread cools for atleast 10 minutes pour over the bread before serving or storing
