OHH BANANAS!! I always have bananas going over ripe and filling up my freezer. Luckily my kids are constantly asking for Banana Bread! Such a sweet treat for them and it counts as healthy because there is fruit in it…right? They love having a slice for breakfast or a snack. It is easy to bring a slice along with us while we run to sporting events too! It also seems a little more filling for them so they don’t need another snack right away (or at least not for another half hour!)
I modified my recipe several times before deeming it perfect! I changed up the order in which I added the ingredients and this one is a winner! It was tough to get enough rise with all the bananas and walnuts but adding the baking soda last was the ticket! It made the loaf rise higher while baking! Banana bread takes a long time to bake but it worth the wait! The whole house smells amazing while baking!
We all loved taste testing it even though my little kids wanted to pick out all the pecans! I love it with the crunch but they can easily be left out or just sprinkled on the top to they can be picked off easily for the little picky eaters!
I love to pick a day to make a few loaves at a time! Its so easy to double this recipe at the same time. I like to let them cool, cut the loaves in half and wrap them in foil and then a bag to put in the freezer! They freeze wonderful and the foil saves them from any freezer burn!

Banana Bread
Sweet incredibly moist Banana Bread with a bit of crunch!
Ingredients
- 2 cups all-purpose flour sifted
- 1 tsp cinnamon
- 3 bananas mashed
- 3/4 cup sugar
- 3/4 cup brown sugar lightly packed
- 1/3 cup vegetable oil
- 1 egg
- 1 tsp vanilla
- 1/3 cup buttermilk
- 1 tsp baking soda
- 1/2 cup walnuts, chopped finely *optional
Instructions

Preheat oven to 325 degrees Fahrenheit. Lightly butter a 9×5 loaf pan and coat with flour.

Sift flour and whisk in the cinnamon, set aside

Mash the bananas using a fork. Whisk in both sugars, oil, egg and vanilla.

Add 1 tsp of baking soda directly into the buttermilk, give it a stir and then pour into the banana mixture. It should bubble and foam and this is great as it will make the loaf rise! Stir the buttermilk in just until combined.

The walnuts are optional, if you choose to add then fold 1/4 cup into the banana mixture. Pour the mixture into the loaf pan then sprinkle the remaining 1/4 cup on top of the loaf and place in the oven on the middle rack. Bake for 75 minutes before checking if toothpick comes out clean. Check every 5 minutes if some batter is stuck to the toothpick.
